Discovered around 1826 on the farm of Philip Rick in Woodstock, New York, and named after Jonathan Hasbrouck, the Jonathan apple is a legendary American heirloom. Grown on moderately vigorous, spreading trees with slender, willow-like twigs that serve as excellent universal pollinators, it yields medium-sized, round-conic fruit averaging 65 to 75 millimeters in diameter and 140 to 165 grams in weight. Its smooth, tough skin features a brilliant, deep-carmine red blush overlaid with dark red striping over a yellow-green base. Requiring 700 to 800 winter chilling hours, it thrives exceptionally well in mid-to-high Himalayan belts between 5,500 and 7,000 feet. Harvested mid-to-late September as starches clear, it delivers a distinctly lively, spicy, and intensely tart flavor profile with rich, complex aromatic undertones. The breaking, fine-textured, creamy-white flesh is notably crisp and juicy, storing reliably for three months under standard refrigeration.
